Thankfully, Spring is finally here and with it comes copious amounts of fragrant mint just waiting to be used in a creative way.  I’ve been chopping it up and sprinkling it on just about anything and everything, but the BEST way to use it is in libation form, to wit, the eponymous Mint Mojito.  Its the easiest drink on the planet (well, maybe not, but it’s REALLY simple) to make…

Muddle up a bunch of mint leaves with  a teaspoon or so of sugar, superfine if you have it, till the oils are released into the sugar.  Add a jigger or so of rum (I prefer dark), the juice of 1/2-1 lime, depending on how juicy it is.  Fill with crushed ice, top with a bit of club soda, stir well and garnish with a big sprig of mint.
